This Simple Summer Citrus Salad has to be one of my new favourite lunch dishes this season. I am sure you all know how much I love a combination of sweet and salty, soft and crunchy and oodles of colour and flavour on one pate. Well this salad is the perfect specimen.
And it is literally a Simple Summer Citrus Salad. Salad leaves, avocado, citrus of your choice and some seed and nut salad sprinkles for extra crunch. And while it wouldn’t take long to make from scratch, I am not shy to admit that I used a prepared pack of peeled citrus duo, a baby salad leaf mix, my favourite shop bought orange vinaigrette and ready made salad sprinkle mix too. Less than five minutes to prep and you’ve got a super light and refreshing summer lunch or delicious side dish.
This pack of citrus included oranges and mandarins, but feel free to add grapefruit as well for some added tang, or any choice or combination of citrus you enjoy. Blood oranges would be absolutely delicious too.
This recipe was made for two, but feel free to double up for more servings or if you are using it as a side salad for a protein. It would definitely pair well with fish, especially trout or salmon. And would also be a great side to chicken or for a braai/bbq dish.
I usually use my own choice of nuts and seeds. I love either buying or making a breakfast seed mix which usually includes sunflower, pumpkin, sesame, flax. But I also sometimes add black sesame seeds, poppy seeds or chia seeds. It just depends on what I have in my pantry. The same applies to the choice of nuts. This pre-made nut and seed salad sprinkle includes a mix of seeds, pecan nuts, peanuts and dried onion flakes. Love having it at hand when I’m in a rush.
The Orange Vinaigrette I used is one of the only store bought premade salad dressings I use. This one contains olive oil, orange oil, a little garlic and some herbs. You could use any dressing you wish though. Or make your own with some olive oil, white balsamic/wine vinegar, some dried herbs and a good squeeze of orange or mandarin juice.

Simple Summer Citrus Salad
Ingredients
- 200 gram Baby leaf salad mix or similar
- Orange Vinaigrette or similar*
- 1-2 Ripe avocados Sliced
- Salt and freshly ground Black Pepper to taste
- 300 gram Citrus fruit: Orange, mandarin, grapefruit, blood orange Peeled and quartered
- 30 gram Nut and Seed Mix (Salad topping)** Optional
Instructions
- Place the salad leaves in a bowl and season with a splash of vinaigrette and toss
- Next, pit the avo and slice the flesh, then add the slices to the salad leaves. Season all with salt and freshly ground black pepper
- Plate then add the citrus on top and finally sprinkle with nut and see mix
