If you’re anything like me and you adore apple pie flavours in almost anything, then you’ll absolutely love this bread. It’s the perfect mid day treat or brunch accompaniment. So moist that you can eat it as is and the pieces of apple scattered throughout are a delicious textural addition.
Be warned, it is very difficult to stop at just one slice. I had an idea to use this delicious bread to make a bread pudding, however it took me 3 bakes to realise that if I wanted to use it for another purpose I would have to make two loaves as one loaf barely survives the cooling time in my household. I eventually succeeded so I will be posting that recipe soon.
Cinnamon Apple Bread

Ingredients
- 1 Large Apple Peeled, cored and finely chopped
- ¼ Cup Dark Brown Sugar / Dark Muscovado Sugar
- 1 tsp Ground Cinnamon
- ½ Cup Unsalted Butter (113g) Softened to room temperature
- ⅔ Cup Light brown or white granulated sugar
- 2 Large Eggs
- ½ Cup Milk
- 2 tsp Vanilla Extract
- 1½ Cups All-Purpose Flour
- 1½ tsp Baking Powder
- ¼ tsp Salt
Instructions
- Preheat the oven to 180°C
- Grease a standard loaf pan and set aside
- Peel, core and chop your apple and place in a small bowl. Add the Dark Brown Sugar / Dark Muscovado Sugar and cinnamon to the apples, mix through and set aside
- In a large mixing bowl or the bowl of a stand mixer, add the softened butter and granulated sugar. With a hand mixer or the stand mixer, mix together the sugar and butter until smooth and combined
- Add the eggs and vanilla and mix to combine. Then add the milk and mix again
- Sift in the flour, baking powder and salt and mix until just combined. Do not over-mix at this stage
- Finally, add the apple, sugar and cinnamon mixture and gently fold through. You do not have to mix this thoroughly, it can be streaked through the batter
- Pour the batter into the prepared loaf pan and bake for around 50 minutes or until a skewer or cake tester inserted into the center comes out clean
- Cool in the pan for 10 minutes before transferring to a cooling rack to cool further
Notes
*Feel free to add some chopped nuts, such as walnuts, to this bread if you wish to add some crunch.

Thank you so much. I hope you do. All-purpose flour is normal everyday cake flour. Not self-raising or bread flour which will be specified if needed.
