This chicken noodle stir fry with peanut sauce is a simple and flexible weeknight family meal that you'll definitely want to keep in the rotation

Ingredients
Stri Fry
- 3 Tbsp Peanut, sesame or vegetable oil
- 2 Skinless, boneless chicken breasts Cut into bite sized pieces
- 100 Grams Baby Pak Choi Cleaned if needed and sliced in half length ways
- ¼ Cup Spring/salad Onions Finely sliced
- 250 Grams Fresh Egg Noodles
- 2 Tbsp Finely chopped chives
- Salt & Pepper to taste
- 2 Tbsp Sesame Seeds
- ⅓ Cup Peanuts, roughly chopped
Peanut Sauce
- ½ Cup Peanut butter
- 2 Tbsp Soy sauce
- 1 tsp Sugar
- 1 Small Chili, finely sliced Omit if you don't like heat
- 1 Cloves of garlic (crushed)
- ½ Cup Water
Instructions
- Cut the chicken into bite sized pieces and season with salt and pepper
- In a wok or large pan, heat the oil over medium heat. Add the chicken and saute for around 10 minutes, stirring occasionally, until almost cooked through. Set the chicken aside
- Add the pak choi and spring onions to the pan and saute until they've softened. Reduce the heat to medium low and add the chicken back in. Add the peanut sauce ingredients and stir through until well combined and heated through
- Add the noodles, gently stir and heat through. Now add the chives and salt and pepper to taste
- Sprinkle with the sesame seeds and chopped peanuts and serve
