Blueberry Compote for Blueberry & Granola Yoghurt Pots

I have granola with yoghurt and fruit for breakfast every day in summer. My hubby does too, so I love to make these little prepared yoghurt pots for him to take to work. Fruit compotes are such a great way to use frozen fruit or even fresh fruit that you have in bulk. I hate food waste as you know, so I love finding ways of using produce before it goes bad. Frozen fruit is also a great way to enjoy your favourite fruit when it’s not in season. So I like to stock up when it is.

Not only is this Blueberry Compote perfect to add to yoghurt pots or breakfast parfaits, but it’s such a convenient item to have on hand when you want a delicious dessert. Just pop some on your favourite vanilla ice cream. You can also sprinkle over a little granola or roasted nuts for a little crunch.

Blueberry compote is made with only 3 ingredients. Fresh or frozen blueberries, honey and lemon juice. That’s it. Let it bubble away until it thickens, then pop it in a jar or bowl in the fridge to cool. And it’s ready to use for whatever you wish. And if you don’t like or have blueberries, you can substitute it with any other berry. In fact most fruits would work.

For the Blueberry & Granola Yoghurt pots, all you need is plain yoghurt, granola and blueberry compote. Feel free to add some fresh blueberries and a drizzle of honey as I did.

Ingredients
  

Blueberry Compote

  • 250 grams Frozen or fresh blueberries
  • Zest of approx. 1 Lemon
  • 1 Tbsp Lemon Juice
  • 2 Tbsp Honey

Blueberry & Granola Yoghurt Pots

  • Blueberry Compote
  • 500 grams Plain or Greek yogurt
  • 125 grams Fresh Blueberries
  • Granola
  • Honey for drizzling

Instructions

Blueberry Compote

  • Add the frozen or fresh (I used frozen) blueberries, the lemon juice, lemon zest and honey to a small saucepan
  • Cook on medium heat for 10 – 15 minutes, until the blueberries start to soften and release their juice and the mixture starts to thicken
  • Add the mixture to a jar, jug or tub and cool for a few minutes. Then place in the fridge to chill completely before using

Blueberry & Granola Yoghurt Pots

  • For the yoghurt pots, layer the chilled compote, yoghurt and granola as you wish in your preferred jars or containers. Feel free to either mix a little honey through the yoghurt or drizzle on top. Serve with some fresh blueberries
