Blackened Salmon Rice Bowl made with Soy, Honey, Garlic and Ginger marinaded Salmon
It should be no surprise that I love a quick meal. Especially mid-week when there’s a lot on the go. This Blackened Salmon Rice Bowl is the perfect fit. Made with Soy, Honey, Garlic and Ginger marinaded Salmon, served on Coconut Jasmine rice with a side of spring onions and avocado.
Now when I say quick, I really mean it. Creating the marinade literally takes 5 minutes at most. And that includes cutting the fillet into chunks. I like to do this in the morning, especially when using frozen fish which I defrost overnight. But you can also do so the night before. Once you’ve placed the fish in the marinade, leave it in the fridge or feel free to do this step once you purchase the fish and freeze it in the marinade if meal prepping in advance.
And feel free to use a different fish if you don’t like salmon. I usually prefer trout over salmon, which works great, but any fish or your choice can be used.
While you don’t have to cut the fish fillet into chunks, I prefer doing this as it decreases the cooking time when I’m in a hurry. It literally then takes 7 to 10 minutes at the most to cook. I usually add chopped spring onions to the pan to soften while its warming, then remove them and set them aside before adding the fish.
As for the rice, I’m definitely not ashamed to say that I always keep several packages of pre-cooked rices and grains in my pantry cupboard. These is so incredibly convenient when in a rush. They only take 90 seconds to warm in the microwave. How much more convenient can it be.
So I chop the spring onions and add them to the pan, then pop the rice in the microwave. When the spring onions are soft, I remove them and add the fish to the pan. Pop a lid on top but remember to turn the chunks half way.
While the fish cooks I chop and season some avocado, then get on to flavouring the rice. This Jasmine rice comes with coconut shavings in it. So I simply season with salt, mix through the cooked spring onions, some black sesame seeds, and a little lime zest. I reserve the lime for squeezing over the fish when it’s cooked
That’s it. A delicious, wholesome meal in ten minutes. As I always say, these meals are quicker to prepare and cook than ordering a take away.
