Berry Boost Salad

Need a super antioxidant boost? This Berry Boost Salad is just the thing. Not only is it packed with good-for-you nutrients but it is so delicious. The cherries, blackberries and strawberries are definitely the star. Then paired with baby salad leaves, heirloom baby tomatoes and Buffalo Mozzarella. Yum. Finally drizzle with some balsamic dressing.

This Berry Boost Salad is another perfect summer dish. As with all my salads it’s the perfect combination of sweet and salty, crunchy and soft, crisp and juicy…. It’s a feast of flavours, textures and colours on one plate. Just what you’ve come to expect of my salads.

I really do prefer light meals during the summer months. And whether this is your main or a side, this Berry Boost Salad is definitely perfect for those hot weather days. It’s also a great lunch or picnic dish. But it especially pairs well with red meats so works a treat as a side for a braai/bbq.

Ingredients
  

Salad

  • 200 grams Baby Tomatoes of choice Halved or quartered
  • Salt and Pepper to taste
  • 200 grams Baby salad leaves
  • 200 grams Cherries Pitted and halved
  • 200 grams Fresh Strawberries Quartered
  • 200 grams Blackberries
  • 120 grams Buffalo/Fior di latte Mozzarella Or substitute with Bocconcini or Feta
  • ¼ Cup Seed and/or Nut Mix Optional
  • 2 Tbsp Balsamic Dressing Or plain balsamic vinegar

Instructions

Salad

  • Halve or quarter your baby tomatoes, depending on their size, and place in a large bowl. Season with salt and pepper and give them a good shake to coat
  • Add the baby salad leaves, then pit and halve the cherries and add them too
  • Remove the stems from the strawberries, quarter them and add them to the salad along with the blackberries
  • Tear the mozzarella into bite size pieces and distribute
  • Finally, sprinkle over the seed and or nut mix if using. Give the salad a good toss
  • Add the dressing just before serving
