Quick No Cook Thai Chicken Salad with Rainbow Slaw and Sesame Satay Chicken
This Thai Chicken Salad is one of my staple quick and simple mid-week meals. Now that salad season is upon us, I couldn’t wait to make this one again. What I love most is that it doesn’t involve any cooking, is super delicious, wholesome, and it only takes 10 minutes at most to prepare.
And it’s great to use up left over roast chicken. You can also buy cooked chicken if you wish, like I did. Toss it in your favourite peanut satay sauce and sesame seeds to boost the flavour and crunch. Although this entire dish is a crunch fest with the slaw and nuts added.
You can obviously feel free to prepare the slaw and cook the chicken from scratch. The dish is definitely worth it. But if you’re looking for a super duper quick meal, just pop into your local woolies or other supermarket after work, combine the prepared ingredients et voilá.
Ideal for last minute guests arriving for dinner or a weekend lunch too. This salad is perfect as is, but if you’re serving a larger group, feel free to either increase the quantities or serve with cooked noodles. Either way your family and/or guests will swoon.

Thai Chicken Salad
Ingredients
- 300 gram Cooked chicken breast Shredded or sliced
- ½ cup Peanut Satay Sauce
- ½ cup Black and White Sesame Seeds Plus more for sprinkling
- 350 gram Coleslaw salad mix
- 350 gram Rainbow slaw
- Salt and freshly ground Black Pepper to taste
- ½ cup Thai-Style Lime & Chilli Salad Dressing Or similar
- 30-40 gram Roasted Peanuts
- 30-40 gram Roasted Cashew nuts
- 1-2 Jalapeno Chilli Peppers Optional
Instructions
- Toss the sliced or shredded chicken in the peanut satay sauce, then added the sesame seeds and mix through. Set Aside
- Add the slaw to a large bowl, season with salt and pepper, then add the salad dressing and mix through
- Add the nuts and chicken to the slaw
- Garnish with more sesame seeds and thinly sliced jalapeno chillies for a little more spice if you wish
