Spicy Honey Roasted Carrots & Grains

One of my all time favourite go to weekly meals, this delicious dish is a staple in my household. It requires very minimal effort and is the perfect side or meat free main.

Ingredients
  

  • 4 Large Carrots Chopped
  • 1 Tbsp Olive Oil
  • 1 tsp Medium Curry Powder
  • 1 tsp Masala or Mother in Law's Spice
  • 1 Tbsp Honey
  • ¼ Cup Dates (Chopped) Optional
  • ¼ Cup Coconut Flakes Optional
  • 250 grams Cooked 7 Grain Medley Or any grain or rice blend of your choice
  • 1-2 Cups Baby Spinach Roughly Chopped
  • ¼ Cup Seed and/or Nut Mix
  • Fresh coriander or parsley for garnish Optional

Instructions

  • Preheat the oven to 200°C
  • Wash, dry, trim and chop your carrots
  • In an oven dish, add the olive oil and spices, then add the carrots, sprinkle with a little salt, and toss in the spice mixtures
  • Roast the carrots for approx. 20 minutes until just tender (this will depend on the size of the pieces)
  • In the meantime, prepare the rest of your ingredients and chop your spinach and dates (if you are using dates)
  • Now add the honey, dates and coconut flakes to the carrots and return to the oven for a further 5 minutes
  • Remove from the oven and add your grains, chopped spinach and seed & nut mix. Mix through thoroughly and serve with fresh coriander or parsley

Notes

I like to use a pre-cooked 7 grain medley from Woolworths that just needs warming through. Feel free to use any grains, quinoa, couscous, rice or rice blend of your choice. If cooking from scratch, follow the cooking instructions provided on the pack and prepare at the same time as the carrots are in the oven.
I use dried chopped dates for this recipe. They go deliciously soft and gooey in the oven.
I use a seed mix that contains a blend of sunflower seeds, linseeds, pumpkin seeds & slivered almonds from Fresch.
