
I am definitely someone who has to have snacks in the house. I particularly like making healthy snacks to keep around so that I can control what I take in. Trail mix is the perfect combination of salty and sweet, soft and crunchy for me so it’s super satisfying on all levels. And it literally takes a few minutes to whip up. As will a lot of my recipes, it’s also very versatile so you can add in whatever you have in the house at the time. Basically it’s two parts nuts to one part dried fruit. But you could also add other optional extras such as pretzels or chocolate chips if you wish. I like to keep it simple though.
On a monthly or bi-monthly basis, depending on how much of it we go through, I purchase my nuts, seeds, dried fruits and a few other staple dried goods from an amazing online store called Fresch. The have a wonderful selection of items, all in biodegradable packaging. They also put together some seed, nut and fruit mixes which are my go to ‘cheat’ ingredients. It takes a lot of work out of making homemade granola, trail mix, salad sprinkles etc. Particularly I like to buy their Very Berry Mix, which I use in my trail mix and salads, and includes goji berries, cranberries, sultanas, currants and raisins. I also love their seed mix, which they call Slimmix, and includes raw sunflower seeds, linseeds, pumpkin seeds & slivered almonds. I love using the seed mix in breads, salads and rice dishes. Although they have great nut mixes too, I usually buy these separately so that I can use them in my granolas, banana breads, desserts and savoury dishes too.
Below is the recipe for the trail mix combination in the above photo. But as I said, feel free to substitute to your taste and what you have available.
Simple Trail Mix
Ingredients
- 1 Cup Walnuts
- ½ Cup Pecan Nuts
- ½ Cup Flaked Almonds
- 1 Cup Dried Fruit Mix
- Salt Optional
Instructions
- Preheat your oven to 200°C. If your nuts are already roasted, skip this and the next step.
- Place the nuts of a baking sheet and bake for 5 – 10 minutes. Watch them carefully from the 5 minute mark as you do not want them to burn. Some ovens run hotter than others. If roasting for 10 minutes, mix or shake the nuts at 5 minutes. Remove from the oven and sprinkle with a little salt if you wish and let them cool¼
- When the nuts are cooled, add them to a bowl with the dried fruit and mix
- Store in an airtight container
