Ingredients
Fish
- 250 – 300 Grams Fresh fish I used trout but you can use any fish
- ¾ Cup Panko Bread Crumbs You can use normal, but Panko gives the best crust
- ½ Cup Finely grated Parmesan
- 2 Cloves of garlic (crushed)
- 1 – 1½ tsp Dried Italian Herb Mix
- 3 Tbsp Pesto I used Basil & Lemon Pesto but use any you like
- 1 Tbsp Olive Oil
Three Green Veg Combo
- 2 Tbsp Olive Oil
- 120 Grams Petit Pois Peas Or use frozen peas
- 250 Grams Green beans
- 250 Grams Tenderstem Broccoli
- 1 Clove of garlic (crushed)
- 1 tsp Dried Italian Herb Mix
- Salt and freshly ground Black Pepper to taste
Instructions
Fish
- Preheat the oven to 180°C
- Grate the cheese, crush the garlic and prepare the other ingredients
- Mix the panko, garlic, dried herbs, and parmesan together until wll combined and set aside. Pour the olive oil into an oven dish and place the fish in it (skin side down if it has skin). Season with a little salt and pepper
- Spread the pesto into an even layer over the fish
- Spread the bread crumb mixture over the pesto covered fish
- Bake for 15 – 20 minutes (depending on the size and thickness of your fish), until the fish is cooked through and the crumbs start turning slightly golden (Cook the veggies while the fish is baking)
Three Green Veg Combo
- Add the olive oil, tenderstem broccoli and beans to a pan and begin cooking on medium heat. Sprinkle with the herbs, salt and pepper. After a minute or two add the garlic and peas. Stir to combine all the ingredients and cook for another minute or two
- Add a tablespoon of water to the pan, cover with a lid, and turn the heat to low, letting the veggies steam. Cook for around 5 – 10 minutes depending on the thickness of the veg or if it was frozen. Stir occasionally. Serve with the fish and a sprinkle of fresh parsley (optional) once ready
Notes
This recipe can easily be increased to serve more people. You can serve with any veg although I really like this three green veg combination. I used fresh veggies but feel free to use frozen if that’s what you have. You can also add rice or potatoes if you need to bulk it up.
