Olive, Cheese and Herb Beer Bread

Don’t have yeast? Don’t have time to knead and rise bread? No problem. Even though I have recently learnt to enjoy making traditional bread recipes, I still love making quick breads. Beer bread is a particular favourite. Although it bakes for quite a while, it only takes a few minutes to throw together. No kneading or rising time required.

Servings 1 Loaf

Ingredients
  

  • 3 Cups All-Purpose Flour
  • 2 Tbsp Sugar
  • 1 Tbsp Baking Powder
  • 1 tsp Salt
  • 1 Cup Grated Strong/Mature Cheddar
  • 2 Tbsp Finely chopped chives
  • 1 Clove of garlic
  • 1 tsp Dried or fresh Herbs of your choice I use an Italian Herb Mix
  • ½ Cup Chopped Olives Black or green
  • 1 Bottle of Beer 330 – 340ml Bottle (any beer)

Instructions

  • Preheat your oven to 180°C and grease a loaf tin with non-stick cooking spray
  • Prepare the ingredients (grate the cheese, chop the olives and chives, crush the garlic…) and set aside
  • Sieve or whisk together the flour, baking powder, sugar and salt
  • Mix all the other ingredients, excluding the beer, into the flour mixture until well dispersed
  • Pour the beer into the dry ingredients and mix well
  • Add the mixture to the loaf tin and bake for 50 – 55 minutes, until golden and a skewer or cake tester comes out clean
  • Allow to cool for around 10 minutes in the tin, then turn out onto a wire rack and allow to cool further for around 15 – 20 minutes before slicing
