Maple Pecan Fudge

There’s something really comforting about homemade fudge. It must be the sense of nostalgia that this traditional sweet conjures up. The rich creaminess makes it an ultimate indulgent treat.

Fudge is also the perfect homemade foodie gift for any occasion. Whether it’s Christmas, an end of year gift for a favourite teacher, or a fun way that the kiddos can treat Dad for Fathers Day.

In my humble opinion, maple pecan is the ultimate flavour combination, it literally works with any sweet treat. It therefore also works great for fudge, especially if the fudge is intended as a ‘grown up’ treat or gift, this flavour combination will definitely become a loved version of this traditional sweet.

Ingredients
  

  • 1 Can of condensed milk
  • 80 Grams Unsalted Butter
  • ¼ Cup Maple Syrup (60ml)
  • 175 Grams Light brown/Demerara Sugar
  • 75 Grams Pecan Nuts Roughly chopped

Instructions

  • Grease and line a 18 – 20cm square tin/dish with baking paper
  • Place all of the ingredients, except for the pecans, into a large saucepan and set over a medium heat
  • Stir until the ingredients have melted and continue to stir until bubbles start to appear
  • As soon as it reaches boiling point, reduce the temperature
  • Keep stirring at a steady temperature for around 10 minutes – if you have a sugar thermometer, the mixture should reach 112°C (this is the soft ball stage, see notes below*)
  • Remove the saucepan from the heat and stir for another 10 minutes to thicken the mixture. The mixture should start pulling away from the sides and bottom of the pan
  • Add around half the pecan nuts to the mixture and stir to combine
  • Pour the mixture out into your prepared tin then flatten and sprinkle the remaining chopped pecans on top
  • Leave to cool for 2-3 hours, or until fully set, then divide into pieces – I cut mine into 9 large squares
  • Wrap up and gift to your favourite people. Don't forgot to save some for yourself (quality control)

Notes

This recipe can easily be doubled if you’re making these as a gift
*To test whether the fudge is ready to remove from the heat, i.e. soft ball stage, use a clean spoon and carefully take a little of the mixture and drop it into a clear glass/jug/bowl of cold water. The drop should form a little soft ball when it hits the water. Leave to cool for a moment then pick the ball out of the water. If it’s pliable, sticky and can be moulded in your fingers easily, it has reached the soft ball stage.
