I love a crunchy salad. During the summer months salads are our staple dinner. This super simple crisp and Crunchy Apple & Walnut Salad is my go to when I want something healthy and uncomplicated. Especially when I’ve been indulging in too many desserts or sweets and need something to balance it all out. This particular one serves 4 as a side salad if you’re having a protein, or 2 if this is your main meal.
Crunchy Apple & Walnut Salad
This is a deliciously simple crisp and crunchy chopped salad

Ingredients
Salad
- 1-2 1 Romain Lettuce Heart or 2 Baby Gem Lettuce Hearts Roughly chopped
- 2-3 Cups Baby Spinach Roughly chop larger leaves if you wish
- 1 Cup Roasted Walnuts Roughly chopped
- 2-3 Granny Smith Apples Sliced into thin matchsticks
- ΒΌ Cup Crumbled Feta For sprinkling
- 2 Tbsp Seeds of choice For sprinkling
- Salt & Pepper to taste
Apple Cider Vinaigrette
- 2 Tbsp Apple Cider Vinegar
- 1 Tbsp Olive Oil
- 2 Tbsp Honey
- 1 tsp Wholegrain Mustard
Instructions
Apple Cider Vinaigrette
- Add all the ingredients to a small bowl, jug or jar
- Mix well with a whisk or spoon (or shake if it's in a jar with lid) until emulsified and blended
Salad
- Roughly chop the lettuce and add to a large bowl. Roughly chop the baby spinach if you wish, depending on the size of the leaves, and add to the lettuce
- Add a little salt and pepper to taste at this point
- Roughly chop the walnuts (not too fine) and add to the leaves
- Core the apples and slice into thin matchsticks, and add to the rest of the ingredients
- Crumble the feta and set aside
- When you are ready to serve pour over the Vinaigrette and mix through. Then sprinkle with the crumbled feta and seeds and serve
Notes
I use a seed mix that contains a blend of sunflower seeds, linseeds, pumpkin seeds & slivered almonds.
A tip for measuring honey or any other sticky liquid or syrup is to measure out the oil first and use the same measuring spoon or cup to measure the honey after. This way none of the honey sticks to the measuring spoon or cup. I do this with my granola recipe too when I have to measure out maple syrup.
Do not dress your salad until you are ready to serve as the Vinaigrette will make it soggy if it sits.
Feel free to use blue cheese instead of feta if you wish.
