Caprese Salad

This classic Italian salad is an absolute favourite of mine. It’s a simple and elegant salad made with slices of juicy, ripe tomatoes and creamy mozzarella. Top it with fresh basil leaves and drizzle with balsamic vinegar and extra virgin olive oil, or as I prefer, basil pesto. Then sprinkle with salt and pepper and enjoy!

Ingredients
  

  • 3 Large tomatoes or approx. 300g baby tomatoes Sliced
  • 150 grams Mozzarella or Bocconcini Mozzarella Sliced
  • 1 Handful of fresh basil leaves
  • 2 Tbsp Extra Virgin Olive oil or Basil Pesto
  • 1 Tbsp Balsamic reduction/glaze

Instructions

  • Add a slice of tomato to a plate (or a few slices if using baby tomatoes), then add a slice of mozzarella on top. Keep alternating slices of tomato and mozzarella until you've used up all the ingredients
  • Place fresh basil leaves in between the layers
  • Drizzle the olive oil or pesto and balsamic reduction/glaze on top of the tomatoes and mozzarella
  • Sprinkle with salt and pepper and serve immediately

Notes

I like to use a mix of exotic baby heirloom tomatoes and Bocconcini Mozzarella for this salad. I also love drizzling over my favourite basil pesto instead of the traditional olive oil.
