With Pine Nuts and Cranberries
A deliciously flavoursome side dish with a little festive twist. These Bacon & Garlic Green Beans are full of flavour and super quick to make. The perfect side for your festive feast. I’ve added the optional extra of some dried cranberries to make these a little extra festive.
This recipe is so easily turned into a vegan version too. Just omit the bacon. It will still be super delicious.

Bacon & Garlic Green Beans with Pine Nuts and Cranberries

Ingredients
- 30 grams Pine Nuts
- 6 – 8 Rashers of Streaky Bacon Chopped
- 1 Tbsp Olive Oil If needed, see instructions
- 1 Small Onion (of half a large onion) Finely Chopped
- 2 – 3 Cloves of garlic Finely Chopped or crushed
- 600 grams Green Beans
- 2 tsp Dried Italian Herb Mix or Mixed Herbs
- Salt and Pepper to taste
- 1 tsp Water
- ½ Cup Dried Cranberries* Optional
Instructions
- See notes below regarding the cranberries
- Prepare your ingredients. Chop the bacon into bite sized pieces. Finely chop the onion and garlic. Then rinse, dry, and top and tail the beans. Set everything aside until needed
- Place the Pine Nuts into a dry pan (the same pan you will use for the rest so use a large pan) and bring to medium high heat. Jiggle the pan every minute or two to help the pine nuts colour evenly. Cook for around 5 minutes, or until just turning golden (do not burn). Remove from the pan and set aside for later
- Place the pan back on the heat and add the chopped bacon to the dry pan. Cook for around 5 minutes until crispy. Using a slotted spoon, remove the bacon bits from the pan, leaving the oil in the pan, and placing on paper towel to drain the excess oil. Set aside
- Next, if the bacon has rendered enough oil you do not need to add the olive oil. If it is very little, add the tablespoon of olive oil to the bacon oil. Place the pan back on the heat, turning it down, and add the onion and garlic. Cook while stirring for around a minute until they begin to soften (not brown)
- Add the beans to the pan and season with the herbs, salt and pepper
- Stir to combine then add the teaspoon of water, place the lid on the pan and allow it to steam for around 6 – 10 minutes (depending on the size of your beans and how tender you like them)
- Finally, when the beans are cooked to your liking, add the bacon, toasted pine nuts, and cranberries to the beans, stir through and pop the lid back on for a minute for those ingredients to heat through
- Taste and season again if necessary then give it all a good toss and transfer to your serving dish
Notes
*For recipes such as these I like to re-hydrate/plump up my dried cranberries. This is not essential at all, but if you would like to, cover the cranberries with boiling water, cover with a lid, and let it sit while you prepare and cook the rest of your ingredients
