This has to be one of my all-time favourites. Pear and Pistachio Salad. I know not everyone loves fruit in salad, but I absolutely love a salty and sweet combination. Packham pears are one of my favourite fruits in general so I love including these juicy slices with the crunch of pistachios, pecans or walnuts, fresh baby spinach and some heirloom baby tomatoes. Sprinkle with salty feta or blue cheese and some toasted seeds for the perfect summer salad.
I dress mine with my staple homemade salad dressing of olive oil, balsamic vinegar, honey and wholegrain mustard, but you can use whatever you enjoy.

Pear and Pistachio Salad
Ingredients
Salad
- 3-4 Packham Pears Sliced
- 200 grams Baby heirloom/exotic Tomatoes Quartered/Halved
- 2 cups Baby Spinach Roughly chopped
- 2 cups Butter Lettuce Roughly chopped
- 1 Baby Gem Lettuce Roughly chopped
- ¼ cup Rocket
- Salt and freshly ground Pepper to taste
- ½ cup Roasted Pistachios (shelled) or substitute with pecans or walnuts
- ¼ cup Seeds or Seed Mix of your choice Optional
- 50-100 grams Feta / Blue Cheese Crumbled Optional
Dressing
- 1-2 tbsp Olive Oil
- 1-2 tbsp Honey
- 3 tbsp Balsamic Vinegar White or dark
- 1 tbsp Wholegrain Mustard
Instructions
Salad
- Prepare your ingredients
- Add your halved baby tomatoes to a large bowl and season with salt and freshly ground black pepper
- Rough chop the baby spinach and salad leaves and add them to the tomatoes
- Slice the pears and remove the seedsTip: If slicing the pears or preparing the salad ahead of time, drizzle some fresh lemon juice over the sliced pears to stop them from turning brown
- Add the nuts, seeds and sliced pears and give everything a good mix (You can reserve some of the seeds and nuts to sprinkle over at the end as garnish if you wish)
