Oh how I love a stir fry. This Quick & Easy Veggie Stir Fry is the perfect lunch or mid week meal. Stir fries are so great for packing in nutrients and flavour. What I love too is that you can include almost any veggies. So it’s a super versatile meal and also a great way of using up little bits of fresh veg you might have leftover in the fridge.
This Quick & Easy Veggie Stir Fry is literally quick and easy. A little bit of prep and only a few minutes to cook. To bulk it up for a family meal, add noodles or rice or if you’re a meat eater, you can add that too. Feel free to play around and make it your own.

Quick & Easy Veggie Stir Fry
Ingredients
Stir Fry Sauce
- 2 Tbsp Honey
- 1 Tbsp Wholegrain Mustard
- ΒΌ Cup Soy sauce
- 1 Clove of garlic Crushed
- 1 tsp Crushed fresh or ground ginger
- 1 tsp Lemon juice or vinegar
Stir Fry
- 3 Tbsp Peanut, sesame, olive or vegetable oil
- 2 Cloves of garlic Crushed
- 1 tsp Crushed fresh or ground ginger
- 1-2 Leeks Finely sliced
- 2-3 Cups Cabbage Shredded
- 4 Large Carrots Shredded or finely sliced
- 3-4 Cups Swiss Chard or Spinach Roughly chopped
- ΒΌ Cup Finely chopped chives
- Salt and Pepper to taste
- 1 Small Chili, finely chopped Optional
Toppings
- Β½ Cup Roasted peanuts Optional
- 2 Tbsp Sesame Seeds Optional
- ΒΌ Cup Dried Onions Optional
Instructions
- Prepare the ingredients for the stir fry (including noodles or rice as per package instructions, if using)
- Add all the ingredients for the sauce to a bowl or jar. Stir or shake to combine and set aside
- Add the oil crushed garlic and ginger to a large pot or wok and bring to medium heat. Add the leeks, cabbage and carrots and chilli if using. Stir through. Then add the spinach or chard and pour over the sauce
- Stir, then place the lid on and turn the heat to low. Let the veggies steam for a few minutes.
- Season with salt and pepper, then add the chives and peanuts. If using noodles, add your cooked noodles now, stir everything to combine and place the lid back on. Let cook for a couple of minutes, then sprinkle over the sesame seeds and dried onion if using and serve immediately
