We are all well aware that Granola is my staple breakfast and that I have quite a few of my favourites posted here on the blog. So why not give my favourite breakfast a Christmassy twist. Say hello to my Cranberry & Pistachio Christmas Spice Granola. It’s my same basic recipe with a tweak to the spices, the nuts and the fruit.
I am so convinced that you’ll like this Cranberry & Pistachio Christmas Spice Granola that I would suggest it as a perfect simple foodie gift to share with others. It’s great to take a bottle of wine, chocolate or flowers to a party or gathering as a gift to the host or hostess. I, on the other hand, love to give homemade foodie gifts. They’re personal and show a lot of thought, without being overly expensive. Great for this time of year when we have more of these to attend than usual.
If you’re not a fan of cranberries or pistachios, feel free to substitute with a nut or fruit you prefer. For some ideas, check out my Pecan Maple, Banana Bread, or Honey Roasted Almond Granola recipes.
Cranberry & Pistachio Christmas Spice Granola
Ingredients
- 4 Cups Rolled Oats*
- 2 Tbsp Brown Sugar** Optional
- 1 tsp Ground Cinnamon
- ½ tsp Ground Allspice
- ¼ tsp Ground Ginger
- ½ tsp Salt (see notes below) Leave out if using salted nuts
- ¼ Cup Coconut oil, melted***
- ½ Cup Maple Syrup or Honey
- 1 Cup Pistachios (see note below) Shelled
- 1 Cup Dried Cranberries (see notes below)
Instructions
- Preheat the oven to 150°C and prepare a large baking tray (I like to line mine with a silicone baking mat for ease of cleaning but this is not essential. Go without or use baking paper or foil)
- In a large bowl, mix the rolled oats, sugar, spices and salt (see recipe notes re salt). Then add the maple syrup or honey to the melted coconut oil and pour over the oats. Mix until all the oats is coated, then add the pistachios (if using raw nuts. See notes) to the mixture and stir through (the cranberries will be added after baking)
- Pour the mixture into the prepared baking tray and spread to form an even layer
- Bake for 15 minutes. Then remove from the oven, give it a good stir, spread out again, then bake for another 15 minutes. Depending on your oven, and how golden and crunchy you like your Granola, you might want to remove it at this stage. I baked mine for an additional 10 minutes after stirring the second time
- When your Granola is the colour you like remove from the oven, add the cranberries (and nuts if using pre-roasted nuts), stir through and let cool on the baking tray
- Once completely cooled, store in an airtight jar or container
