Date & Walnut Loaf

I love the combination of fruit and nuts in a breakfast loaf. Having had my fill of banana bread over the last few months, I like to alternate with some different fruit and nut flavours. This Date & Walnut loaf is an old favourite. It’s filled with sweet sticky dates that almost have a caramel flavour and a delicious crunch from the walnuts. It definitely qualifies as the perfect breakfast accompaniment.

Ingredients
  

  • 1 Cup Dates Pitted and chopped
  • 1½ tsp Baking Soda
  • 60 grams Unsalted Butter
  • 1 Cup Boiling water
  • ½ Cup Light brown sugar
  • 2 Large Eggs
  • 1½ Cups All-Purpose/Cake Flour
  • ½ tsp Baking Powder
  • ½ tsp Salt
  • ½ Cup Walnuts Chopped

Instructions

  • Preheat the oven to 180°C
  • Grease a standard loaf tin with non-stick cooking spray and set aside
  • In a large bowl, combine the chopped and pitted dates, baking soda, butter and boiling water. Stir and let sit for 15 minutes
  • Next, add the sugar and whisk until dissolved. Then add the eggs and whisk until incorporated
  • Sieve the flour, baking powder and salt and add it to the wet ingredients. Mix until just combined, then add the walnuts and mix trough
  • Pour the mixture into the prepared loaf tin and bake for 45 – 55 minutes, or until a skewer or cake tester inserted in the middle comes out clean
  • Leave to cool in the tin for around 15 minutes. Then remove and let cool further on a cooling rack
  • Slice and enjoy!

Notes

Tip: Measure the dates only once pitted and chopped. Do the same with the walnuts, measure once chopped
This loaf freezes really well so it’s perfect for meal prep.
