Happy Gotha Day to our sweet Miss Mabel. Once year ago today we collected this frightened pup from the airport. It has taken quite some time for her to settle in but she is becoming more confident by the day. Adopting is not always easy, but it is super rewarding and in the end all they want is love and you receive it back by the bucket load.
If you don’t already know I have a category in my recipe menu dedicated to Pooches. I’ll be adding some doggie friendly treats for everyday and special occasions every now and then so please do check it out if you need some inspo. You will already find the recipe for a Chicken & Carrot Doggie Birthday Cake there, and now these, what I assume are yummy Peanut Butter and Yoghurt Pupcakes. These recipes are made with human ingredients, but free from sugar and salt and anything the four-legged fur babies shouldn’t consume.
Peanut Butter & Yoghurt Pupcakes
Ingredients
Pupcakes
- 2 Tbsp Vegetable or olive oil
- ⅓ Cup Plain Yoghurt
- 3 Tbsp Natural Peanut Butter (Unsalted & sugar-free)
- 1 Large Egg
- ½ Cup Whole wheat flour
- 1 tsp Baking Powder
Icing/Frosting
- ¼ Cup Natural Peanut Butter (Unsalted & sugar-free)
- 3 Tbsp Plain Yoghurt
Instructions
Pupcakes
- Preheat the oven to 180°C. Line a mini-muffin pan with paper cupcake liners and set aside
- In a large mixing bowl add the oil, yogurt, peanut butter and egg. Beat until well combined
- Add the flour and baking powder into the mixture and mix until well combined, but do not over mix
- Evenly fill each cupcake liner with approx. 1 tablespoon of the mixture
- Bake the pupcakes for around 12 minutes then test with a skewer or cake tester. If it comes out clean they are ready. Leave to cool in the pan for around 5 minutes, then remove from pan and cool completely on wire rack before frosting
Icing/Frosting
- In a mixing bowl beat peanut butter and yogurt together until well combined
- Spread or pipe the peanut butter frosting onto the pupcakes
- Decorate further if you with and serve (Store in an airtight container in the fridge)
