Key Lime Pie

I absolutely love citrus desserts. This delicious Key Lime Pie is super simple to make and a staple recipe in my home.

Ingredients
  

Pie Crust

  • 2 Cups Bakers Tennis Biscuit Crumbs 1x 200g Pack (crushed)
  • 100 grams Unsalted Butter Melted

Filling

  • 2 Cans of Sweetened Condensed Milk 2x 385g Cans
  • 2 Large Eggs
  • 1 Cup Lime juice
  • Zest of 3 Limes

Instructions

Pie Crust

  • Preheat your oven to 180°C
  • Crush your biscuits by either placing them in a plastic bag and smashing them with a rolling pin, pulsing them in a food processor, or crushing them in a pestle and mortar
  • In the microwave oven or in a small saucepan on the stove, melt the butter
  • Mix the melted butter with the biscuit crumbs until well combined
  • Place the mixture into a 25cm pie dish. I use a non-stick one with a removable bottom, but this is not necessary. Push the crumbs up the sides and over the bottom with a spoon or silicone spatula to create a compacted crust
  • Bake for 10 minutes, then remove from the oven and cool. Do not switch off the oven or remove the crust from the pie dish as it will be further baked with the filling

Filling

  • While the crust is cooling you can prepare the filling
  • Begin by zesting 3 limes and juicing enough limes to produce 1 Cup of juice
  • In a large bowl, whisk together the condensed milk, eggs, lime juice and lime zest until completely smooth and combined
  • Pour the filling into the prepared pie crust and smooth out the top
  • Bake for 10 minutes or until set. A very slight jiggle at this point is normal so take care not to over bake the pie
  • Let cool completely, then refrigerate for at least 2 hours to set further
  • Decorate with fruit or fresh whipped cream
