Ingredients
- 1½ Cups All-Purpose Flour
- 1 tsp Baking Soda
- ½ Cup Castor or granulated sugar
- ½ Cup Light brown sugar
- ½ Cup Unsalted Butter Melted (113g)
- ½ Cup Peanut Butter Smooth or Crunchy
- 1 Large Egg
- ½ tsp Vanilla Extract
- 16 – 20 Solid chocolate hearts
Instructions
- Preheat the oven to 180°C
- Place the chocolate hearts in the fridge
- Line two baking sheets with baking paper or silicone baking mats
- Sift or whisk the flour and baking soda into a bowl and set aside
- In a medium sized mixing bowl, combine the sugar, brown sugar, & melted butter
- Add the peanut butter, egg, & vanilla, and stir until well combined
- Add the dry ingredients and stir until well combined
- With an ice cream or cookie scoop or or spoon, scoop and roll the dough into approx. 4cm balls and place on the lined cookie sheets. Flatten each ball slightly
- Bake the cookies in batches for 10-15 minutes. Be careful not to over bake them or your cookies will turn out hard. They are ready when the edges are just starting to go golden and the centre is still soft
- Remove cookies from the oven and leave for around a minute or two to cool. Quickly place a chocolate heart in the centre of each cookie, pushing down very gently. This has to be done while the cookies are still warm and soft in the centre. But work quickly and gently as the heat of the cookies will melt the chocolate. Leave the cookies on the sheet for another few minutes to cool. Then move them gently with a lifter to a wire wrack to cool further. If making these in a hot climate/summer time you might want to store the cookies in an airtight container in the fridge once cooled to prevent the hearts from melting
Notes
This is a staple peanut butter cookie recipe. I have used store bought solid milk chocolate hearts. You can use dark or white chocolate hearts, but they should be solid or filled to keep their structure. Using store bought hearts is what makes these super easy and fun to do with kids.
I put my hearts in the fridge before placing on the hot cookies to prevent them melting too quickly on the hot cookies.
Work very quickly and only push down gently otherwise the hearts will melt and the cookies will split. You don’t have to push them down too much as the chocolate will stick to the warm cookies.
My oven takes longer than most on the bake setting. Please check your cookies after 10 minutes he shortest suggested baking time. You want them to just be slightly golden on the edges and have a soft centre. Otherwise the cookies will be hard and you won’t be able to add the hearts.
